This is one of Italy's oldest cheeses, a sheep cheese that dates back to the Roman Empire. The Locatelli brand is produced by the Auricchio family, since early 1900s. Pecorino Romano features heavily in many of Rome's most famous dishes: pasta all'amatriciana, pasta carbonara, and cacio e pepe.
Pecorino Romano is has a very white paste which can be quite crumbly in texture. The paste darkens and hardens as the cheese matures. Really mature Pecorino can be very hard with casein crystals.
During maturation, aroma and flavor are changing as well. From milk to rather piquant and salty. A great cheese to sprinkle over above-mentioned dishes.
